Dietary polyphenols modulate starch digestion and glycaemic level: a review.

Abstract
Polyphenols, as one group of secondary metabolite, are widely distributed in plants and have been reported to show various bioactivities in recent year. Starch digestion not only is related with food industrial applications such as brewing but also plays an important role in postprandial blood glucose level, and therefore insulin resistance. Many studies have shown that dietary phenolic extracts and pure polyphenols can retard starch digestion in vitro, and the retarding effect depends on the phenolic composition and molecular structure. Besides, dietary polyphenols have also been reported to alleviate elevation of blood glucose level after meal, indicating the inhibition of starch digestion in vivo. This review aims to analyze how dietary polyphenols affect starch digestion both in vitro and in vivo. We can conclude that the retarded starch digestion in vitro by polyphenols results from inhibition of key digestive enzymes, including α-amylase and α-glucosidase, as well as from interactions between polyphenols and starch. The alleviation of postprandial hyperglycemia by polyphenols might be caused by both the inhibited starch digestion in vivo and the influenced glucose transport. Therefore, phenolic extracts or pure polyphenols may be alternatives for preventing and treating type II diabetes disease.

Review: Crucial role of inorganic pyrophosphate in integrating carbon metabolism from sucrose breakdown to starch synthesis in rice endosperm.

Abstract
The endosperm is a primary constituent of mature seeds in rice as well as in other cereal crops, serving as the major storage reserve of starch. Observations indicate that the central part of the endosperm is subject to hypoxic conditions, which require a switch of energy metabolism owing to limited mitochondrial respiration. Uniquely, this endosperm generates a large source of inorganic pyrophosphate (PPi) as a byproduct of the reaction of ADP glucose pyrophosphorylase in the cytosol. Recent results derived from examination of the mutants of cereal crops, especially rice, for PPi-utilizing enzymes clearly suggest an important role of PPi as an alternative energy currency for integrating carbon metabolism from sucrose breakdown to starch synthesis in the endosperm. Thus, the present review provides an outline of the interlaced PPi-dependent metabolic pathways, which are critical for starch synthesis in the endosperm in terms of energy metabolism, along with its application to enhance yield potential.

Influencing factor of resistant starch formation and application in cereal products: A review.

Abstract
According to different sources, structures, digestive properties and applications, resistant starch (RS) can be divided into five categories. The Influencing factors of RS mainly include intrinsic properties and external factors. The intrinsic properties include crystal type, granular structure, and the ratio of amylose and amylopectin. The external factors include chemical constituents and processing conditions. The characteristics of RS and its physiological effects on the human body could affect cereal food products to make functional foods with different application. In this paper, five kinds of RS classification, important physiological effects and related application in cereal production are analyzed and summarized. When added to dough, bread, noodle, steamed bread, RS could affect the nutritional value and texture characteristics of food.

Advances and challenges in the production of extracellular thermoduric pullulanases by wild-type and recombinant microorganisms: a review.

Abstract
Thermoduric pullulanases, acting as starch-debranching enzymes, are required in many industrial applications, mainly in the production of concentrated glucose, maltose, and fructose syrups. To date, however, a single pullulanase, from Bacillus acidopullulyticus, is available on the market for industrial purposes. This review is an investigation of the major advances as well as the major challenges being faced with regard to optimization of the production of extracellular thermoduric pullulanases either by their original hosts or by recombinant organisms. The critical aspects linked to industrial pullulanase production, which should always be considered, are emphasized, including those parameters influencing solubility, thermostability, and catalytic efficiency of the enzyme. This review provides new insights for improving the production of extracellular thermoduric pullulanases in the hope that such information may facilitate their commercial utilization and potentially be applied to the development of other industrially relevant enzymes.

Starch granules as active guest molecules or microorganism delivery systems.

Abstract
Starch granules contain an internal channel structure that can be used to encapsulate and deliver active ingredients such as nutrients, drugs, chemicals and microorganisms. Nature creates a broad range of starch granule sizes and compositions in different plants and this range of encapsulation matrices provides a great deal of commercial opportunity. Starch granules can be utilised for encapsulation in their native form or treated with amylases/amyloglucosidase to facilitate the entry of active ingredients into the granules. Interactions within the granules can be relatively passive or more structured in the form of complexes (such as amylose-lipid complexes). This mini-review evaluates this application of starch and potential commercial product opportunities.

Starch granule initiation and morphogenesis-progress in Arabidopsis and cereals.

Abstract
Starch, the major storage carbohydrate in plants, is synthesized in plastids as semi-crystalline, insoluble granules. Many organs and cell types accumulate starch at some point during their development and maturation. The biosynthesis of the starch polymers, amylopectin and amylose, is relatively well understood and mostly conserved between organs and species. However, we are only beginning to understand the mechanism by which starch granules are initiated, and the factors that control the number of granules per plastid and the size/shape of granules. Here, we review recent progress in understanding starch granule initiation and morphogenesis. In Arabidopsis, granule initiation requires several newly discovered proteins with specific locations within the chloroplast, and also on the availability of maltooligosaccharides which act as primers for initiation. We also describe progress in understanding granule biogenesis in the endosperm of cereal grains-within which there is large interspecies variation in granule initiation patterns and morphology. Investigating whether this diversity results from differences between species in the functions of known proteins, and/or from the presence of novel, unidentified proteins, is a promising area of future research. Expanding our knowledge in these areas will lead to new strategies for improving the quality of cereal crops by modifying starch granule size and shape in vivo.

Storage of starch and lipids in microalgae: Biosynthesis and manipulation by nutrients.

Abstract
Microalgae accumulate starch and lipid as storage metabolites under nutrient depletion, which can be used as sustainable feedstock for biorefinery. Omics analysis coupled with enzymatic and genetic verifications uncovered a partial picture of pathways and important enzymes or regulators related to starch and lipid biosynthesis as well as the carbon partitioning between them under nutrient depletion conditions. Depletion of macronutrients (N, P, and S) resulted in considerable enhancement of starch and/or lipid content in microalgae, but the accompanying declined photosynthesis hampered the achievements of high concentrations. This review summarized the current knowledge on the pathways and the committed steps as well as their carbon allocation involved in starch and lipid biosynthesis, and focused on the manipulation of different nutrients and the alleviation of oxidative stress for enhanced storage metabolites production. The biological and engineering approaches to cope with the conflict between biomass production and storage metabolites accumulation are proposed.

Citric Acid Production from Acorn Starch by Tannin Tolerance Mutant Aspergillus niger AA120.

Abstract
In this study, acorn starch was investigated as a new material for fermenting production of citric acid by using a tannin tolerance mutant strain Aspergillus niger AA120. The mutant A. niger AA120 was obtained by initially atmospheric pressure plasma at room temperature (ARTP) mutagenesis and then tannin gradient domestication. ARTP experiments showed that a "double-saddle" shape of survival rate curve was achieved, and a positive mutation rate of 63.6% was reached by setting the implantation time of mutagenesis to 100 s. In contrast to the original stain at the presence of 20.0 g/L tannin in the medium, the selected mutant A. niger AA120 exhibits an increase of biomass by 43.76% to 32.9 g/L, and citric acid production capacity by 20.34% to 130.8 g/L, with 8% (w/w) of inoculation quantity, an initial pH of 6.2 and shaking speed of 250 r/min. In this work, we present a referable method for the mutagenesis screening of the A. niger, and the application of acorn starch as a new raw material for the development of the citric acid industry.

The microstructure of starchy food modulates its digestibility.

Abstract
Starch is the main carbohydrate in human nutrition and shows a range of desired food properties. It has been demonstrated that fast digestion of starchy food can induce many health issues (e.g., hyperglycaemia, diabetes, etc.); therefore, how to modulate its digestion is an interesting topic. Previous studies have revealed that the microstructure and digestibility of starchy food of different botanical origin or from multiple processes are quite different; modulating starch digestion by retaining or altering its microstructure may be effective. In the present review, the current knowledge of the relationship between microstructural changes to starchy food and its digestibility at molecular, cell and tissue, and food processing levels is summarized. New technologies focused on microstructure studies and ways to manipulate food microstructure to modulate starch digestibility are also reviewed. In particular, some insights focusing on the future study of microstructure and the digestibility of starchy food are also suggested.

Crop resistant starch and genetic improvement: a review of recent advances.

Abstract
Resistant starch (RS), as a healthy dietary fiber, meets with great human favor along with the rapid development and improvement of global living standards. RS shows direct effects in reducing postprandial blood glucose levels, serum cholesterol levels and glycemic index. Therefore, RS plays an important role in preventing and improving non-communicable diseases, such as obesity, diabetes, colon cancer, cardiovascular diseases and chronic kidney disease. In addition, RS leads to its potential applied value in the development of high-quality foodstuffs, such as bread, noodles and dumplings. This paper reviews the recent advances in RS research, focusing mainly on RS classification and measurement, formation, quantitative trait locus mapping, genome-wide association studies, molecular marker development and genetic improvement through induced mutations, plant breeding combined with marker-assisted selection and genetic transformation. Challenges and perspectives on further RS research are also discussed.
